I think it's similar to "souse soup" which is popular here in South Florida.
Chopped Pig Ears, Pig Tails, Hog Maws in a broth of tomato sauce/juice, lime juice, onion, hot sauce, ect.
Bahamians make a Chicken Souse the same way.
Soda Crackers and something to cool down the heat and you got a PARTY!  Wink Grin

Wow, I'm late on this but our typical menu consists of:

Chicken
Ribs
Fish (croaker, & whiting (breaded with seafood breader, Lawry's seasoned salt and little bit of cinammon...it's like CRACK!!!)
Trotters
Baked beans
Pasta salad
Boiled corn on the cob
Beverages

The Low Country Boil may get infused into the menu this year.

What are trotters?   shrug

Pigs Feet or drumsticks.  I'd think it was pigs feet since TE already listed chix on the menu...

My pops had a name for everything....
Switch-abouts = pig or ox tails
listeners = pig ears
snifflers = pig snouts
landing gears = chix wings

and he'd be up in the store telling us to get him 5# of switch-abouts like it was nobody's business.....
